INGREDIENTS :
For the potatoes :
- 6 medium raw potatoes ( about 8 ounces each)
- 1/4 cup 98% fat free , low sodium chicken broth
- 1/2 tbs butter (or 1 tbs light butter/margarine)
- garlic powder , to taste
- salt & pepper , to taste
- cooking spray
For the Shepherd's Pie filling :
- 1 tsp olive oil
- 1 small onion , chopped
- 2 cloves garlic , chopped
- 1 lb lean ground beef
- 1 tbs flour
- 1 cup 98% fat free , low sodium chicken broth
- 2 tbs tomato paste
- 1 tbs Worcestershire sauce
- 1 1/2 cups frozen mixed vegetables (corn, carrots, peas, green beans)
- 1 tsp thyme
- salt & pepper , to taste
INSTRUCTIONS :
- Preheat oven to 400 degrees. Scrub potatoes with water and a brush. Place on a sheet pan. Lightly spray with cooking spray and sprinkle with kosher salt. Bake for one hour or until tender to touch.
- When there's about 10 minutes left for the potatoes to cook- Place olive oil, chopped onion, and garlic in skillet and sauté over medium-high heat. When the onions are translucent add ground beef. When the ground beef is mostly cooked, sprinkle flour over the beef and toss to coat. Add chicken broth, Worcestershire sauce, tomato paste, thyme, and salt & pepper to taste. Bring to a boil, then reduce to simmer. Stir in frozen mixed vegetables and continue to simmer for about 10-12 minutes.
- While the Shepherd's Pie filling is simmering- Take your potatoes, cut in half, and scoop the inside of the potato into a bowl. Place potato skins back onto the cookie sheet.
- In the bowl with the potato filling add butter and chicken broth. Quickly mash together. Add salt, pepper, and garlic to taste.
- When the beef mixture is done cooking add about 1/4 cup to each potato half. Top each potato evenly with mashed potatoes. If desired, sprinkle some cheese on top.
- Place back into a 400 degree oven for about 10-12 minutes.
