Skinny Taco Cups

Good morning, friends!  I’m therefore excited to share succeeding installment of “Balancing the Buttercream” with all of you today.  These skinny turkey taco cups area unit my go-to party food and therefore the ones that forever appear to disappear in a very snap. Everybody forever asks for the instruction therefore I finally took the time to put in writing one down and I’m telling you, they're therefore easy to make! good for any weekend festivities you’ve got occurring, or that game that’s happening on Sunday.

So the instruction is pretty uncomplicated and comes along very fast.  The black beans very stretch the filling and lend a sincerity I need in a very dish.  You get various flavor from the bell pepper, onion, garlic and ground cumin. After you use all those treats, you don’t would like that stuff that comes in a very package that says taco seasoning – they scare Pine Tree State.  Moving on, a bit condiment offers it a pleasant kick, and a small amount of Greek yoghurt stirred in at the tip altogether seals the deal.  Seriously, it adds this unbelievable richness to the entire state of affairs – simply attempt to not eat it alL.

Next up area unit the wonton cups.  Brush each side of them terribly gently with vegetable oil, press them into mini cake tins, and bake until they get a bit golden.  Spoon some taco filling in, sprinkle on a dab of cheese, and pop them back in only until it melts.

At now they’re virtually able to party, they only would like many accessories. Error some additional Greek yoghurt with a zipper of lime zest & juice and spoon on prime.  Hit them with a bit cilantro and you’re viewing a pair of bites of awesome.
INGREDIENTS :
  • 1 package ground turkey (usually around 1.3lbs.)
  • 1 small red onion, diced
  • 2 cloves of garlic, finely chopped
  • 1 can black beans, rinsed and drained
  • 3/4 cups salsa
  • 1 red bell pepper, diced
  • 2 teaspoons ground cumin
  • 1 pack wonton wrappers
  • 1 Tablespoon olive oil
  • 2 Tablespoons light sour cream or plain low-fat Greek yogurt
  • 1 cup reduced fat shredded cheese
  • 1/2 cup plain low-fat Greek yogurt - I used Chobani
  • zest of 1/2 lime
  • juice of 1/4 - 1/2 lime, add to taste
  • cilantro for garnish

INSTRUCTIONS :
  1. Preheat oven to 350 degrees.

Turkey Taco Filling :
  1. Add ground turkey to preheated pan and brown over medium-high heat for 4-5 minutes. Make sure to break up the meat as it cooks.
  2. Add in diced onion, bell pepper, and garlic and continue to cook for an additional 5 minutes.
  3. Season with salt, pepper, and 2 teaspoons ground cumin.
  4. Stir in 3/4 cups salsa and black beans. Turn heat down to medium and simmer for about 10 minutes.
  5. Stir in 2 Tablespoons light sour cream or low-fat Greek yogurt.

Taco Cups :
  1. Very lightly brush both sides of wonton wrappers with olive oil.
  2. Press into mini cupcake tins.
  3. Bake at 350 degrees for 6-7 minutes till they start to get some color. Keep a close eye on them.
  4. Spoon turkey filling into wontons and top with a little cheese.
  5. Pop them back in the oven and bake at 350 degrees for about 5-6 minutes just till cheese melts.

Taco Topping :
  1. Mix 1/2 cup yogurt with lime zest and juice.
  2. Spoon yogurt on top of taco cups & garnish with cilantro.
