Forget about take out and feature this Crockpot chook and Broccoli instead! i like recipes like this, because it certainly tastes higher than take-out, you could schedule it to be ready precisely whilst you need it, and *bonus* it’s healthier!
Ingredients
Crockpot Chicken and Broccoli:
- 1 cup chicken broth
- 1/2 cup soy sauce or gluten free alternative
- 1 tablespoon hoisin sauce
- 1/4 cup dark brown sugar packed
- 1 tablespoon sesame seed oil
- 4 cloves garlic minced or pressed
- 1 1/2 pounds raw boneless, skinless chicken breasts
- 2 tablespoons cornstarch
- 1/4 cup water
- 1 head broccoli cut into florets
Rice:
- 1 cup long grain rice
- 2 cups water
- 1 teaspoon salt
- 1 tablespoon unsalted butter
Instructions
Crockpot Chicken and Broccoli:
- Whisk together chicken broth, soy sauce, hoisin sauce, brown sugar, sesame seed oil, and garlic cloves.
- Pour half of the sauce into a greased crockpot. Place chicken breasts in and then pour the remaining sauce over the chicken.
- Cook on low for 4 hours, covered.
- Mix together cornstarch and water and stir it into the crockpot.
- Stir in broccoli florets.
- Cook on high for 1 hour, covered.
- Remove the chicken, cut into large chunks, and place back in the crockpot.
- Serve immediately over rice!
Rice:
- Place rice, water, salt, and butter in a medium sized sauce pan.
- Bring to a boil.
- Cover, lower heat to low, and simmer for 15 minutes. Fluff with a fork.
