Crockpot Chicken and Broccoli

Crockpot Chicken and Broccoli


Ingredients
Crockpot Chicken and Broccoli:
  1. 1 cup  chicken broth
  2. 1/2 cup  soy sauce or gluten free alternative
  3. 1 tablespoon  hoisin sauce
  4. 1/4 cup  dark brown sugar packed
  5. 1 tablespoon  sesame seed oil
  6. 4 cloves  garlic minced or pressed
  7. 1 1/2 pounds  raw boneless, skinless chicken breasts
  8. 2 tablespoons  cornstarch
  9. 1/4 cup  water
  10. 1 head  broccoli cut into florets

Rice:
  • 1 cup  long grain rice
  • 2 cups  water
  • 1 teaspoon  salt
  • 1 tablespoon  unsalted butter


Crockpot Chicken and Broccoli


Instructions
Crockpot Chicken and Broccoli:
  1. Whisk together chicken broth, soy sauce, hoisin sauce, brown sugar, sesame seed oil, and garlic cloves.
  2. Pour half of the sauce into a greased crockpot. Place chicken breasts in and then pour the remaining sauce over the chicken.
  3. Cook on low for 4 hours, covered.
  4. Mix together cornstarch and water and stir it into the crockpot.
  5. Stir in broccoli florets.
  6. Cook on high for 1 hour, covered.
  7. Remove the chicken, cut into large chunks, and place back in the crockpot.
  8. Serve immediately over rice!
Rice:
  1. Place rice, water, salt, and butter in a medium sized sauce pan.
  2. Bring to a boil.
  3. Cover, lower heat to low, and simmer for 15 minutes. Fluff with a fork.
