Mustard Chicken Marinade

My husband Paul brought home an outsized pack of split chicken breasts the opposite day.  I take giant packages of chicken, beef or pork and break them down into what we’ll use for dinners and freeze them. However, I unbroken some of chicken breasts intent on do that marinade. I boned the split breasts thus i'd have boneless  breasts to steep and grill.  My thinking was, grill them and use them for dinner and lunches for subsequent number of days.  Grilled chicken is thus sensible in salads and sandwiches throughout the recent summer months, and mustard chicken marinade is ideal for this.

I don’t sit up for Spring and Summer to create Mustard Chicken Marinade. Throughout the winter months, I grill my marinaded chicken on a forged iron grill pan on the stove. It’s even as delicious as creating it on the outside gas grill.

Mustard Chicken Marinade

INGREDIENTS :
  • 1/4 cup white vinegar
  • 3 Tablespoons Spicy Brown Mustard
  • 3 cloves garlic minced
  • 6 Tablespoons olive oil
  • Black pepper to taste
  • 6 boneless skinless chicken breast halves
  • 1 lemon plus half lemon, juiced
  • 1/2 cup light brown sugar
  • 1 1/2 teaspoons salt

INSTRUCTIONS :
  1. In a large size glass bowl ( no not use metal bowls) whisk together ingredients beginning with the white vinegar down to the salt. Whisk in the olive oil and pepper. Place the chicken breast in the glass bowl with the marinade, cover and refrigerate for 8 hours or overnight.
  2. Remove chicken from marinade, discard marinade. Turn your grill on and lightly oil it. Grill about 10 minutes per side.
