I’m very excited regarding today’s fancypants c-tail offering: Frozen Basil Bellinis. Just like the majority of human ladies, I significantly fancy fruity frozen drinks throughout the sweatier months, however I’m not an admirer of the crazy quantity of sweetening (and additives) concealment in most edifice versions and boughten mixes. So, in an attempt to avoid the categorical train to Hangover/Bloat town, I typically play frozen barman with my favorite booze, real fruit, and also the occasional soft herb. Last year’s go-to was the Frozen Rosé drink from The gallant Diet, however this summer I’m all regarding the frozen champagne cocktails, and this basil composer is my favorite up to now.

This refreshing twist on the classic composer swaps peach puree for frozen peaches and incorporates recent basil for a lil flavoring twist. It’s icy and sweet with a joyous fizz, and despite trying fancy AF, it’s virtually as idiot-proof as combination a hard drink soda. Simply add all the ingredients to a liquidiser and switch it on. Boom, done. And since the formula yields 6-8 cocktails (depending on your pour), it’s excellent for sharing with friends. I like this as a summer brunch cocktail, however it'd even be killer for bridal showers, barbecues, birthday parties, and poolside hangs. It’s versatile like that.

INGREDIENTS :
- 4 cups frozen peaches
- 1 bottle chilled Prosecco or champagne
- ¾ cup loosely packed fresh basil leaves
INSTRUCTIONS :
- Add the peaches and Prosecco/champagne to a blender and blend until smooth. Add the basil and pulse until it's broken down into very small pieces.
- Serve immediately. Garnish with peach and fresh basil leaves if you're feeling fancy.
