INGREDIENTS :
  • 1 1/2 cups water
  • 1 cup basmati or jasmine rice
  • 1 cup crushed pineapple (juice included)
  • 2 tsp. granulated sugar
  • 1/4 – 1/2 tsp. red pepper flakes
  • 1 Tbsp. unsalted butter
  • 1/2 tsp. kosher salt
  • juice 1/2 lime
  • chopped fresh cilantro

INSTRUCTIONS :
  1. Bring water, pineapple, sugar, butter, salt, and red pepper flakes to a boil in a small saucepan. Stir in rice, reduce heat to low, and simmer, partially covered for 15 minutes or until tender.
  2. Remove pan from heat, let sit for 5 minutes, then fluff rice with a fork. Stir in lime juice and chopped cilantro (per personal taste – I love cilantro so I usually go heavy but you can add as much as you like).
