Bourbon Chicken Sheet Pan Dinner

One in all my favourite meals court food has constantly been bourbon chicken.  there was a time wherein my friends and i would go to the mall each Saturday while i was in college.  while we by no means had a variety of cash to spend, we one way or the other continually controlled to scrape up sufficient money to treat ourselves to lunch.

Bourbon Chicken Sheet Pan Dinner


Ingredients
  • 1 pound Chicken Thigh
  • 1 pound Chicken Drumsticks
  • 1 pound Fingerling Potatoes
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 bunch Broccoli, cut into florets

For the Sauce:
  • 1 teaspoon Olive Oil
  • 1/3 cup Apple Juice
  • 1 teaspoon Ground Ginger
  • 1 clove Garlic, minced
  • 1/4 cup Brown Sugar
  • 1 tablespoon Apple Cider Vinegar
  • 1 tablespoon Molasses
  • 2 tablespoons Soy Sauce
  • 1/3 cup Ketchup
  • 1/4 cup Bourbon

Instructions
  1. Preheat the oven to 450°F.
  2. Spray a sheet pan with non-stick spray.
  3. Arrange chicken pieces and potatoes on the baking sheets. Sprinkle with salt and pepper. Bake chicken and potatoes for 20 minutes.
  4. Meanwhile, prepare bourbon sauce. Combine the sauce ingredients in a medium saucepan over medium heat. Whisk until the ingredients are incorporated. Continue to cook on low until the mixture begins to thicken.
  5. After the chicken has been baking for 20 minutes, add the broccoli to the same pan. Baste chicken pieces with the sauce and continue to bake chicken for another 18-20 minutes or into an internal temperature registers 165 degrees.
