One in all my favourite meals court food has constantly been bourbon chicken. there was a time wherein my friends and i would go to the mall each Saturday while i was in college. while we by no means had a variety of cash to spend, we one way or the other continually controlled to scrape up sufficient money to treat ourselves to lunch.
Ingredients
- 1 pound Chicken Thigh
- 1 pound Chicken Drumsticks
- 1 pound Fingerling Potatoes
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 bunch Broccoli, cut into florets
For the Sauce:
- 1 teaspoon Olive Oil
- 1/3 cup Apple Juice
- 1 teaspoon Ground Ginger
- 1 clove Garlic, minced
- 1/4 cup Brown Sugar
- 1 tablespoon Apple Cider Vinegar
- 1 tablespoon Molasses
- 2 tablespoons Soy Sauce
- 1/3 cup Ketchup
- 1/4 cup Bourbon
Instructions
- Preheat the oven to 450°F.
- Spray a sheet pan with non-stick spray.
- Arrange chicken pieces and potatoes on the baking sheets. Sprinkle with salt and pepper. Bake chicken and potatoes for 20 minutes.
- Meanwhile, prepare bourbon sauce. Combine the sauce ingredients in a medium saucepan over medium heat. Whisk until the ingredients are incorporated. Continue to cook on low until the mixture begins to thicken.
- After the chicken has been baking for 20 minutes, add the broccoli to the same pan. Baste chicken pieces with the sauce and continue to bake chicken for another 18-20 minutes or into an internal temperature registers 165 degrees.
