Vegetable Teriyaki Noodles

Vegetable Teriyaki Noodles



Ingredients
For Noodles:
  • Vegetable Oil Or Sesame Oil – 3 Tbsp + 2 Tsp
  • Bell Pepper, Julienned – 3/4 Cup (I Have Used Red, Green And Yellow)
  • Broccoli Florets – 1/4 Cup
  • Mushrooms, Sliced – ½ Cup
  • Onion, Sliced – 1
  • Carrot, Julienned – 1 Medium
  •  Handful Of Whole-Grain Spaghetti (Or Other Noodles)
  •  Teriyaki Sauce – 50g
  • Freshly Ground Black Pepper – 1/2 Tsp
  • Red Chili Flakes – 1/4 Tsp
  • Salt To Taste
  • Garlic, Finely Chopped – 1 Tbsp
  •  Hot Sauce – 1 1/2 Tbsp (Optional)\

For Garnish:
  • Sesame Seeds
  • Roasted Peanuts


Vegetable Teriyaki Noodles


Instructions
  1. First, put a large pot of water on to boil. When it boils, add in the noodles.
  2. Once the noodles are cooked, strain them in a colander or strainer.
  3. Rinse under a running tap with some cold water, and then add in 2 tsp vegetable oil and mix well, so they don’t stick together.
  4. Heat oil in another pan, and add chopped garlic. Saute for a minute.
  5. Add all the vegetables and saute for few minutes.
  6. Add ground pepper and chili flakes, and saute them till vegetables are almost cooked but still crunchy.
  7. Add in the teriyaki sauce and let everything soak up the sauce for a few minutes.
  8. Add in the cooked noodles, mix well and let them soak up the remaining sauce.
  9. Add hot sauce and salt. Mix well and cook for few more minutes.
  10. Garnish with some sesame seeds and roasted peanuts. Enjoy!
