Chickpea Quinoa Salad with Orange Miso Dressing

Chickpea Quinoa Salad with Orange Miso Dressing


Ingredients
Salad: 
  • 12 cherry tomatoes, halved
  • 4 green onions, sliced
  • 1/2 cup dry quinoa
  • 1.5 cups garbanzo beans (chickpeas), cooked or canned, drained and rinsed
  • 3 Tbsp fresh cilantro

Dressing: 
  • 1/4 cup orange juice, (juice from 2 oranges)
  • 1/4 cup seasoned rice vinegar
  • 2 tsp white or yellow miso
  • 1 Tbsp maple syrup or agave nectar
  • 1 clove garlic, minced
  • 1 tsp ginger, grated or minced
  • 2 tsp black sesame seeds

Chickpea Quinoa Salad with Orange Miso Dressing


Instructions
Salad:
  1. Cook quinoa by placing in sauce pan with 1 cup water. Bring to a boil, then reduce heat, cover, and simmer for approximately 15 minutes
  2. You will know when quinoa is done when all the water is absorbed and the grains have turned from white to transparent. 
  3. Chop veggies. 
  4. Combine all veggies and beans in large bowl with quinoa. 

Dressing:
  1. Mix dressing ingredients in bowl and whisk together. 
  2. Combine salad and dressing. Serve warm or chilled.
