This light and clean salad includes quinoa, chickpeas, and greens with a tangy orange miso dressing. Recipe from Physicians Committee for responsible remedy.
Ingredients
Salad:
- 12 cherry tomatoes, halved
- 4 green onions, sliced
- 1/2 cup dry quinoa
- 1.5 cups garbanzo beans (chickpeas), cooked or canned, drained and rinsed
- 3 Tbsp fresh cilantro
Dressing:
- 1/4 cup orange juice, (juice from 2 oranges)
- 1/4 cup seasoned rice vinegar
- 2 tsp white or yellow miso
- 1 Tbsp maple syrup or agave nectar
- 1 clove garlic, minced
- 1 tsp ginger, grated or minced
- 2 tsp black sesame seeds
Instructions
Salad:
- Cook quinoa by placing in sauce pan with 1 cup water. Bring to a boil, then reduce heat, cover, and simmer for approximately 15 minutes
- You will know when quinoa is done when all the water is absorbed and the grains have turned from white to transparent.
- Chop veggies.
- Combine all veggies and beans in large bowl with quinoa.
Dressing:
- Mix dressing ingredients in bowl and whisk together.
- Combine salad and dressing. Serve warm or chilled.
